LE CREUSET ROUND FRENCH OVEN
BEFORE FIRST USE
Remove all labels. Wash the pan in hot soapy water, rinse and dry thoroughly. Pans with enamelled cooking surfaces are now ready for use and require no further preparation. Non–stick surfaces should be wiped with cooking oil to condition them.
HEAT SOURCES
Le Creuset cast iron cookware can be used on all heat sources. Gas, electric solid or radiant plates, vitroceramic glass, induction, and ranges fired by gas, oil, coal or wood.
When using on any glass stovetops always follow the manufacturer’s guidance for use of your cookware.
Never drag pans across the glass, but lift on and off, or from one heat zone to another.
The enamel surfaces (except for black enamel on grills or products with a non–stick inner coating) are not suitable for dry cooking. Your choice of liquid, oil, fat or butter should completely cover the base before heating begins. Non–stick surfaces may be used dry, but special care must be taken not to overheat the surface and the pan must not be left unattended at any time.
HEAT SETTINGS
Medium and low heats will provide the best results for the majority of cooking, including frying and searing. Allow the pan to heat gradually and thoroughly, as this will give the most even and efficient cooking results. Once the pan is hot almost all cooking can be continued on lower settings.
High heats should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks and sauces. High heats should never be used to pre–heat a pan before lowering the heat for cooking. Cast iron retains heat so well that if a pan is overheated in this way it will contribute to poor cooking results, sticking and discolouration of cooking surfaces. Non–stick surfaces are permanently damaged by this misuse.
Match the pan base to the heat zone. Do this to maximise efficiency and prevent overheating of pan sides or damage to handles. Long handles should be positioned safely so that they do not overhang the front of your stovetop, or over other heat zones.
OVEN
TEMPERATURES
For Black phenolic lid knobs and handles, use at maximum temperature 190°C /
375°F/Gas 5 (Europe gas setting 6). Integral cast iron handles or stainless
steel knobs can be used at any oven temperature. Wooden handles must not be
placed in the oven.
RANGE STOVES WITH CAST IRON OVEN LININGS
Do not place any cookware on the floor of these ovens. Cook only on the racks provided.
CAST IRON OR STAINLESS STEEL KNOBS
These will become hot during stovetop as well as oven use. Use a dry, thick cloth, or oven mitts, for handling these at all times.
DO NOT
Don't heat an empty pan or allow a pan to boil dry. Either may cause permanent damage to the enamel and pan.
Don't cut foods directly on any enamel or non–stick surface.
Electric hand held beaters or mixers should not be used in any cookware. Permanent damage to all surfaces will be caused.
FOR STIRRING COMFORT
Use Le Creuset heat resistant silicone utensils, heat resistant plastic or wooden tools. Occasional use of metal utensils may leave silver trail marks over the surface. Do not knock metal utensil on the rims of cookware, this will eventually damage the enamel.
FOR SURFACE PROTECTION
Place hot pans on Le Creuset silicone mats, wooden boards, or trivets. Never place a hot pan directly on an unprotected surface.
AFTER USE
Always cool a pan for a few minutes before washing in hot soapy water. Rinse and dry thoroughly.
Do not fill a hot pan with cold water or plunge into cold water as thermal shock damage to the enamel may occur.
If there are food residues fill the pan with warm water and leave to soak for 15 – 20 minutes, and then wash in the usual way. Nylon or soft abrasive pads or brushes can be used to remove stubborn residues. Do not use metallic pads, or harsh abrasive cleaning agents as these will damage the enamel and polished trims.
Black enamel cooking surfaces will, over time, produce a patina (a brownish film). Do not attempt to clean this off as it enhances the cooking performance and food release from this surface.
Light stains or metal trail marks (caused by metal tools) can be removed with Le Creuset Cookware cleaner. An occasional conditioning clean with this product will also retain the new appearance and polish of your pans.
Cleaning and care
All pans with integral cast iron, phenolic handles, or stainless steel lid knobs, can be washed in the dishwasher, but constant dishwashing may lead to some dulling of the enamel finish. This is not harmful and will not impair performance. When using the dishwasher always allow the cycle to complete before opening the door. This will ensure the pans are dried thoroughly.
Wooden handle pans are not dishwasher safe. Non–stick surfaces may be washed in the dishwasher, but after each cycle the surface should be re–conditioned with cooking oil.
Never store away pans when they are still damp. Store pans in a dry cupboard or airy space away from kitchen steam.
Maintain the tightness of all handles and knobs by checking and re–tightening them regularly.
Le Creuset enamelled cast iron is extremely durable, but it may be damaged if accidentally dropped or knocked against a hard surface.
LE CREUSET STONEWARE
The recommendations for care and use apply to all Le Creuset stoneware products.

USE
GRILL / BROILER
When using under a grill/broiler allow a gap between the rim of the dish and the heat source of no less than 6 ½ cm / 2 ½ inches.
MICROWAVE
Handles may become hot during prolonged microwave use and especially if the handles are enclosed with cling film. Cover just the open top of the dish leaving the handles exposed.
FREEZER TO OVEN USE
Do not place a frozen dish of food in a pre–heated oven. Place the frozen dish in a cold oven and set the temperature, allowing the dish and oven to heat together. Before serving, always check that the centre of the food is completely and uniformly hot.
Cleaning and Care
Before
use, wash the dish in hot soapy water, rinse and dry thoroughly. For most day
to day cleaning, cool the dish for a few minutes then wash and dry as above, or
wash in the dishwasher, allowing the full cycle to complete. Never leave a dish
fully immersed in water. For removal of stubborn residues allow the dish to
cool, fill with warm soapy water and allow it to soak for 10 – 20 minutes. Wash
in the usual way using, if necessary, a plastic brush or scouring pad.
Continued metal contact with the stoneware glaze may result in some residual
marking. These marks can be removed with a soft cloth and a non-abrasive
cleaner suitable for glazed stoneware and metal marks.
Repeated dishwashing may result in dulling of the stoneware glazed finish.

Before using for the first time, wash in hot, soapy water with a sponge or dishcloth. Rinse in hot water and dry thoroughly.

To prevent water spotting
After washing, rinse in hot water and dry immediately.
Cleaning the Stainless steel exterior
The polished stainless steel exterior of All-Clad Stainless requires very little care. It may be polished with one of the available commercial stainless steel cleaners, rubbing in a circular motion. Rinse in lukewarm water. We do not recommend using steel wool, steel scouring pads or harsh detergents. Nylon scrubbing pads are safe to use. You may wash Stainless in the dishwasher.
Cleaning the nonstick coating pans
Do not put your non-stick cookware in the dishwasher because high heat
and harsh detergents will corrode and dry out the surface.
Almost all non-stick problems are related to a buildup of visible and/or
invisible layer of cooking residue on the non-stick surface. We recommend
cleaning the non-stick with a paste made of equal parts bicarbonate of soda and
water. Rub in a circular motion with a non-metallic scrubbing/cleaning
pad recommended as being safe for use on non-stick surfaces, or perhaps a soft
brush such as a vegetable brush. Then rinse well with water. If the
bicarbonate of soda mixture starts turning brown, you are on the right
track. Rinse well with cool water and dry. Then condition the non-stick
surface by wiping a little vegetable oil around the surface with a paper
kitchen towel. Wipe off any excess.
ALL-CLAD STAINLESS STEEL
Stainless Steel first use
The "Stainless Steel" collection is completely dishwasher-safe. It is recommended that before you use your Stainless Steel All-Clad you wash it in the dishwasher first to remove any manufacturing residues and this will help you to keep it shiny.
Preheating
Most recipes recommend placing our pots on low heat for one or two minutes before adding foods.
Frying without natural fats

Add food for frying.
If sticking is a problem check:
Is your cooker level?
Is your pot clean?
Is your heat set too high?

Salt damage
To avoid the formation of small white dots or pits, bring liquids to a boil before adding salt, then stir well. Or, add salt after food has started to cook. Pitting does not interfere with cooking performance but can diminish the beauty of the stainless steel.
To prevent water spotting
After washing, rinse in hot water and dry immediately.
Discolouration
Overheating can cause brown or blue stains. Food films, if not removed, will cause discoloration on the pot when it is reheated. Large amounts of iron content in your water may cause your pot to look rusty.
Cleaning the Stainless steel interior
Immerse in warm water. Use a fine powder cleanser with water to form a paste. Apply paste using a soft cloth. Rub in a circular motion from the centre outward. Wash in hot, soapy water, dry immediately. DO NOT USE oven cleaners or cleansers with chlorine bleach. DO NOT USE steel wool.

Heat Recommendations
Le Creuset silicone spatulas are heat-resistant to 482°F / 250°C, so they are ideal for stovetop cooking. Utensils should not be left in pans while cooking, and handles should not overhang the sides. Heat from the stove can damage the wooden handle.
Cleaning and Care
Silicone
is dishwasher-safe, so accessories made entirely from silicone can be placed
directly in the dishwasher.
To clean wooden-handled utensils simply remove the silicone blade by pulling it
from the handle and place in the dishwasher. Wash the wooden handles by hand
and dry well before replacing the clean utensil blade.
Mineral oil can be used on the wooden handle after drying to preserve its good
looks.

IMPERIA SP150 PASTA MACHINE
How to prepare the Imperia for first use.
1) Fasten
the machine to a table
or counter, using the special clamp provided. It fits in the square hole on the
same side where you insert the handle. Be sure to tighten the clamp before
starting.
2) To clean the machine of packing oils, put a small ball of dough between the
rollers and roll it through; make a ball and run it through again several
times.
3) Do the same with the ball of dough and the cutting rollers.
4) Dispose of the dough.
Using the Imperia.
1) Turn the adjustment knob until
the flat rollers are at their widest opening.
2) Start passing part of the dough through the rollers, turning the handle.
3) Before passing the pasta through the rollers another time, fold the sheet in
two and sprinkle lightly with flour.
4) Pass the pasta through the widest opening 6 to 8 times, folding it in two
each time. The dough should be fairly soft. If it is too sticky, sprinkle
lightly with flour.
5) Reduce the spacing between the rollers by one notch. Pass the sheet of dough
through the rollers once.
6) Continue reducing the space between the rollers by one notch at a time, each
time passing the lengthening sheet of dough through the rollers once. Stop once
the desired thickness has been obtained.
7) When the sheet of dough gets too long, divide it lengthwise in half, to make
it easier to handle.
8) Leave the sheet to rest for about 10 minutes, so that it will dry slightly
and be hard enough for cutting, without sticking to the cutting rollers.
9) Attach the cutter accessory to the body. Supports are provided on both sides
of the machine.
10) Insert the handle in the slot of the chosen cutter.
11) Lightly sprinkle flour on the sheet, to prevent it from sticking to the
cutter. Then start passing it through, turning the handle with one hand, while
holding the sheet with the other.
12) Place the cut pasta on a large surface, or on a drying rack, so that it
dries before cooking.
Cleaning.
Clean excess flour left on the
Imperia and its attachments, using a soft brush.
A dry cloth may be used to wipe the body.
NEVER wash your Imperia and accessories. Some of the precision
components are made of steel and may rust if they come in contact with water.
Occasionally place a drop or two of mineral oil where the ends of the rollers
meet the machine body, to keep them rolling smoothly.
Store in the original box, in a dry location. Use it often.

How to prepare the machine for use
Affix the machine onto the table or work surface with the clamp provided and insert the handle into the roller hole.
When using the machine for the first time, clean it with a dry cloth to remove any excess oil. To clean the rollers, pass a small quantity of dough through them and then throw the dough away.
How to prepare the dough and the pasta with Atlas
Set the machine regulator to position 1, pulling it outwards and turning it so that the two smooth rollers are completely open (approx. 3 mm).
Pass a piece of mixture through the machine while turning the handle.
Repeat this operation 5 to 6 times, folding the dough over and adding some flour to the middle if necessary.
When the dough has taken a regular shape, pass it through the rollers once only with the regulators set on number 2 (approx. 0.2 mm). When using a cutter that makes round spaghetti, set the regulator on number 5.
With a knife, cut the dough crossways in pieces approximately 25 cm (10") long.
Insert the handle in the hole for the cutting rollers, turn it slowly, and pass the dough through so as to obtain the type of pasta you prefer.
Note 1: If the rollers won't cut, it means the dough is too soft. In this case, add flour to the mixture, then pass the dough through the smooth rollers repeatedly until the right texture is achieved.
Note 2: If the dough does not get "caught" by the cutting rollers, add a little water to the mixture, then pass it through the smooth rollers repeatedly until the right texture is achieved.
Place the cut pasta on a table cloth or drying rack, and leave it to dry for at least an hour.
Fresh pasta will keep for 1-2 weeks if stored in a cool, dry place.
Bring a pan of salted water to a boil (4 liters per 1/2 kg of pasta) to which you will add the pasta.
Fresh pasta cooks in just 2-5 minutes, depending on its thickness.
Stir gently and then drain the pasta once it has finished cooking.
Maintenance of the Atlas
To remove cutting attachments, lift up, making it slide up along its tracks.
To install attachments, slide them down on the tracks.
During use, keep the scrapers underneath the smooth rollers clean with parchment paper.
Never wash the machine with water or in the dishwasher.
To clean the machine after use, use a brush or a wooden rod.
If necessary put several drops of vaseline oil or mineral oil on the ends of the cutting rollers.
Do not insert knives or cloths in the rollers.
After use, replace the machine and its accessories in the original box.
